Porchetta
Porchetta is a famous dish offered in the Lazio region of Italy. Ariccia, in particular is known for its Porchetta. Porchetta is pork prepared by adding boning and spices before being cooked in the oven for at least three or four hours. The flavor is enhanced with garlic, rosemary, and black pepper. It has a crunchy crust, and light color and flavor. Porchetta can be served on its own or in a sandwich. Ariccia has grown so famous for its porchetta that they have a porchetta festival every September to celebrate the traditional dish.

This fraschetta is the one and only restaurant housed in the walls of the Chigi palace. Fabiola’s is a family run restaurant that specializes in porchetta sandwiches and serves different types of local dishes within its grotto. Selling porchetta runs in the family and the sandwiches served here draw in crowds from all over Italy.
